Why should I eat avocados? (I heard no one say ever…) They are made up of 80% water and dietary fibre. They are made up of 15% monounsaturated fatty acids, which protect against cardiovascular disease. Avocados are low in sugar and high in vitamins, minerals and phytochemicals! Ingredients
- ½ ripe avocado
- ½ T lime juice
- Salt and pepper, to taste
- 1 t dukkha
- 3 slices sourdough bread, toasted
- Olive oil for drizzling (about ½ T)
- Snow pea sprouts, for garnish
Methods
- Spoon the avocado into a bowl, add the lime juice, salt and pepper and smash with a fork.
- Drizzle the olive oil over the toast and spoon the avocado mixture on top.
- Sprinkle the dukkha over the top.
- Garnish with snow pea sprouts.
