I’ll just say that again. VEGAN PUFF PASTRY GARLIC KNOTS. Did you hear me?? Yup these amazing little creations are a combination of two of the most delicious things in the world – garlic bread & puff pastry. Garlic bread and puff pastry with a little twist… Get it? Because they’re knots? hahaha
Well even if you didn’t think that was funny, I promise you’ll love the recipe. I mean who doesn’t love puff pastry and garlic? The correct answer is no one and if you disagree you’re wrong… Go on give these vegan puff pastry garlic knots a go! They make the perfect snack or appetiser, or hey, you could even go all out and just eat them as a meal. I’m not saying I’ve never done that before.

Ingredients
- 1 sheet puff pastry, cut into quarters
- 3 cloves garlic, minced
- 2 T extra virgin olive oil
- ½ T fresh parsley, chopped, packed firmly
- ¼ t mixed herbs
- Salt and pepper, to taste
Methods
- Take the sheet of pastry out of the freezer to thaw, leaving the backing paper on.
- Preheat the oven to 180°C.
- Line a baking tray with baking paper.
- Mince the garlic and combine in a small bowl with olive oil, parsley, mixed herbs, salt and pepper.
- Coat half of the pastry sheet with this mixture.
- Fold the sheet in half so that the mixture is now sandwiched between two pieces of pastry. Press down a little so the layers stick together. Remove the backing paper from the top layer only.
- Cut the pastry along the long edge into approximately 3-cm-wide strips – you should end up with about 9 strips.
- Pick each strip up, place down on the baking tray, then fold one edge diagonally inwards, then the other diagonally inwards (see diagram).
- Bake in the oven for approximately 23 minutes or until puffy.
