Try this delicious vegan apricot balls recipe for a healthy, satisfying sweet snack with no added sugar! These babies are raw, vegan, refined sugar-free and gluten-free! They only take a total of 10 minutes to make and they’re full of essential fatty acids and amino acids. These taste EXACTLY like the apricot logs and apricot squares from the supermarket, but they’re SO much healthier and better for you. If you don’t have desiccated coconut you can quickly chop shredded/flaked coconut in the food processor prior to starting!

Ingredients
- 3 cups dried apricots
- ½ cup mixed nuts/almonds/nut of choice
- ½ cup shredded/desiccated coconut + another ¾ cup desiccated to roll balls in
- 2 t coconut oil
- 2 t vanilla essence
Methods
- Place all the ingredients except the extra coconut in a food processor and process until well combined.
- Roll tablespoonsful of mixture into balls and then roll in extra coconut.
